Roasted BBQ Pork

Ingredients for pork seasoning:
We used sliced pork shoulder, however you can use whichever fillets you prefer.
Paprika
All Purpose seasoning
Pork seasoning
Ingredients for BBQ sauce:
BBQ sauce
Jerk seasoning
Mixed herbs
Dried rosemary
Ketchup
Method (based on 4 fillets):
Cut your piece of pork into fillets, unless you bought them like this.
Clean your pork with water and lime. Ensure you are not near any dishes to make sure there is no contamination.
Once cleaned lets season! Add 2 x tablespoons of Bon Mangé green seasoning, 1 teaspoon of paprika, 1 tablespoon of all-purpose seasoning, 1 tablespoon of pork seasoning. Mix together and leave to one side to marinate for 30 mins - 1 hour.
Whilst your pork is marinating lets prepare your sauce. Mix together 1 cup of BBQ sauce, 3 tablespoons of ketchup, 1 tablespoon of jerk seasoning (we used our homemade mix, however you can purchase an brand you like!), 1 tablespoon of Bon Mangé green seasoning & 1 teaspoon of dried rosemary. Cover and leave to one side.
Once your meat has marinated, prepare to cook. We cooked ours on the BBQ (in this UK winter, we know!), however if you do to want to do this, the oven is ok!
BBQ GRILL METHOD:
Pre-cook in oven for 25 mins.
Cook on grill whilst turning every 5 mins on each side. Once cooked and nice and brown, with a little crisp, brush on your BBQ sauce onto one side, flip and cook. Whilst this side is cooking, brush the top side with our sauce. After 3 mins, flip and cook the top side.
Repeat this with all fillets on the grill & once cooked take off grill and add some more sauce one top of your grilled pork.
OVEN METHOD:
Fan 190 degrees, gas mark 9.
Cook in over for 25 mins. After 25 mins turn around and cook for a further 25 mins.
After the total of 50 mins cooking, brush on your BBQ sauce to the top side and cook for 10 mins.
After 10 mins flip and add BBQ sauce to the other side & cook for a further 10 mins.
Remove and add some more BBQ sauce to taste.
We cut our fillets into smaller pieces to share, however it is totally up to you!
