Fish Friday - Green Banana & Salt-fish salad

A play on a traditional St.Lucian “green fig salad”

Full of potassium, protein and flavour!


Prep time: 15 - 20 mins Cook Time: 50 mins including cool down time.


Ingredients:


Method (based on serving 2 large salads):

  • Rinse your salted cod to remove excess salt. Then boil in a pan for 25 mins. After 25 mins, change the water & boil for a further 10. You do not want to remove all the salt, as this will add flavour to the salad later on.

  • Rinse your green banana, chop the top ends off and boil with a drop of oil and salt in the water. You can also peel the green banana before hand and boil. Boil for around 15 mins.

  • Whilst salted cod is boiling, dice your mixed bell peppers. We used 1 side of 3 different colours.

  • Chop 2 spring onions.

  • Once your salt-fish has boiled and your green banana is soft drain the water.

  • Dice your green banana and crumble your salt-fish on top and leave to one side to cool down.

  • Once cooled down, mix together with your peppers, spring onions, 1 tablespoon of Bon Mangé’s green seasoning, 1 teaspoon of black pepper & a drizzle of lemon juice.

  • Add a handful of chopped parsley, mix in & serve!

This is a lovely winter salad, full of flavour!
