Meatless Monday’s - Cauliflower fried chicken

Crunchy Vegan Fried Chicken (With Cauliflower of course)

Served with Aunty Val’s Hot Sauce

Prep time: 20mins Cook Time: 30mins


Ingredients:

  • 1 large cauliflower

  • Corn Flour

  • Plain Flour

  • Paprika

  • Garlic & Onion Powder

  • Black Pepper

  • All Purpose seasoning

  • Mixed herbs

  • Plant based milk (we used oat)

  • Vegetable Oil

  • Aunty Val’s Hot Sauce


Method:

  • Cut cauliflower into large or medium florets. Wash & drain then leave to one side.

  • Place vegetable oil on a medium heat to get hot, in preparation for frying.

  • Pour a cup of your choice of milk, into a bowl

  • Add 1 tbsp spoon of garlic powder, onion powder, paprika, mixed herbs and black pepper to the milk.

  • Add 2 tbsp of corn flour and 3 tbsp of plain flour (gluten free options can also be used).

  • Whisk the mixture until smooth. You should have a runny, yet thick consistency that will coat the cauliflower. If not, then add more milk or more flour depending on your consistency.

  • Once the the coating is ready, coat as many florets that can fit into your pan and continue until complete.

  • Drain on paper towel.

  • Once drained place in a serving bowl and enjoy! Serve with Aunty Val’s hot sauce for extra fire!
