Fish Friday - Fried Fish Stew

Fish Friday Winter Warmer

The perfect dish to start the weekend

Ingredients:

For fish:

For stew:

  • Cherry tomatoes

  • White onions

  • Tumeric

  • Mixed bell peppers

  • Paprika

  • All purpose seasoning (we used Knorr Aromat)

  • Plain Flour


Method (based on preparing 3 pieces of fish):

  • Clean your fish by descaling, gutting & removing tails/fins (if this has not been done where you purchased). Clean with water/fresh lime or lemon.

  • Once fish is clean and water drained, add 3 tablespoons of our Bon Mangé Green Seasoning, 1/2 tablespoon of fish seasoning, 1 tablespoon of all purpose seasoning, black pepper & 1 tablespoon of paprika. Allow to marinade for a minimum of 20 mins. Fish absorbs flavour very well. Although it is great to marinade overnight, you will still taste a lot of flavour!

  • Whilst the fish is marinating, chop your ingredients in preparation for your stew. This includes:

    6 cherry tomatoes in half

    One small side of a red, green & yellow bell peppers and chop how you would like. We chopped ours vertically.

    Dice one half of a white onion

  • Once ingredients are prepared for the stew, prepare a separate frying pan to deep-fry your fish with sunflower or vegetable oil.

  • Prepare your fish to deep fry by coating in a plain flour flavoured mix. This flour includes the following:

    1 cup of plain flour

    1 tablespoon of all-purpose

    1 tablespoon of fish seasoning

  • Deep-fry your fish. Fry for 6 mins on each side. Make sure fish is cooked and a nice golden brown before removing and draining. Then leave covered to one side

  • In a separate fairly deep frying pan, add around 2 tablespoons of vegetable or sunflower oil for your stew. Once the oil is heated, add your chopped veg along with the following:

    1 teaspoon of turmeric

    2 tablespoons of all-purpose seasoning (we used Knorr Aromat)

    1 teaspoon of paprika

    1 tablespoon of plain flour

  • Mix this together in the pan and once soft and the flour is mixed, add hot water and leave simmer for 10 mins.

  • Check back on your stew and taste for flavour and thickness. You may need to add some more all-purpose seasoning at this stage.

  • Once the flavour is right, add your 3 pieces of fried fish to the mix and allow to simmer for a further 5-10 mins.

  • Once the stew has taken the flavour from the seasoning & the fish added and the mixture has the perfect consistency, you can enjoy! This dish can be served with white rice or hard food!
